Sambal Terasi,The Best Chili Recipe from Indonesia

Hello Moms....Speaking about The Best Chili Recipe, Asia is the great place to taste a variety of spicy foods, including  Indonesian Foods that in fact  2 of 3 Indonesian love eating a spicy dish that can be tempting and need to eat more and more..do you know what it is..? it's called Sambal, the additional dish  and also a complementary to the meals of Indonesian Cuisine.Sambal has so many variants,  one of the famous is SAMBAL TERASI,. hmm what a great taste, with is main ingredients, Chilies, shrimp paste( terasi ), red onion and tomato mashed together on a thing called "cobek" and served with fresh vegetables commonly called "lalapan" it could be cucumbers, basil, carrots, cabbage and many more.

To Make this chili recipe is easy enough, first prepare cobek, if you don't have it  use a  blander, but not too fast for rotation and long when using it, just use a slow rotation for a few second. Actually there are so many recipes to make Sambal terasi but I only write the recipe I've tried  :

Ingredients :
- Red Chilies to taste, it could be 5 or more, you may add Cayenne pepper ( cabe rawit ) if you like very spicy
- 3 gr shrimp paste ( terasi ) 
- 1 Tomato
- 2 Red Onion
- 1 Garlic
- 2gr palm sugar / a half of teaspoon Sugar
- 1/3 teaspoon salt
- 1 Limo orange cut in two pieces.( additional )

How to make it : ( there are two ways I used to make this sauce)
1. firts way
- Heat the oil to taste into a frying pan, enter chilies, terasi, tomato, onion and garlic, fry about 50 - 60 seconds. lift and drain it. the tips of frying chilies, tomatoes is cut the chilies into a pieces to avoid splashing of the oil
- put all the ingredients in the cobek or blander, then mashed it slowly
- Flushing with limo lime. now you can taste it
2. second way
- boil the chilies, onion, garlic and tomato
- grilled the shrimp paste ( terasi ) 
- mashed all ingredients with blander or cobek
- heat the oil into pan, put the sauce and stir it, after a minutes, lift it. now you have Terasi sauce
with this way sauce can be last longer and usually made in a significant amount.  in order to look more red sauce use a fresh red chilies.

 And don't forget this chili recipe can be served with fried tempeh or fried chicken, have a nice try, moms....

this sambal terasi looks so good with tempe.
the recipe is almost the same like the malaysian recipe, using shrimp paste and palm sugar.. so yummy :)
